Chile Con Queso Baked Chicken

Ingredients

Queso Sauce

2 tablespoons butter

2 tablespoons flour (or rice flour for gluten-free)

1 cup chicken broth (or milk)

1 cup cheddar cheese, shredded

1 cup salsa

1 cup black or kidney beans (optional)


Queso Baked Chicken

1 pound boneless skinless chicken, cube

1 teaspoon taco seasoning

1 cup cheddar cheese, shredded

1 cup tomato, diced

2 green onions, thinly sliced

1 tablespoons cilantro, chopped


Toppings

jalapeño peppers

cilantro

sour cream

tortilla chips

Directions

Queso Sauce
Melt the butter in a saucepan over medium heat until it foams and just starts to turn a light golden brown colour.

Sprinkle in the flour, mix it into butter and cook until it’s a light golden brown colour, about 2-4 minutes.

Add the milk, mix, bring to a simmer and cook until the sauce thickens a bit, about 2-3 minutes.

Add the cheese and cook until it melts.

Mix in the salsa and beans, if using.

Queso Baked Chicken
Season the chicken with the taco seasoning and place in a baking pan.

Pour the queso sauce over the chicken

Sprinkle on the cheese.

Bake in a preheated 350°F/180°C oven until the chicken is cooked through, about 30-40 minutes.

Notes:
Halved the broth/milk in the queso because it came out way too soupy
